With Christmas just around the corner, I love baking even more. I don’t know why? I kind of get swept up the spirit of it all and get all Nigella-ish in the kitchen.
These loaded thermomix Christmas cookies are so simple to make you could do them with your eyes closed. They are also so versatile too…….. you could use them as pressies by wrapping up a few in clear cellophane with pretty ribbon, or you could could bring them with you to any Christmas parties you’re invited to. They’re so much more personal than a box of chocolates (especially when they’re quicker to make than it take to go to the shop and buy the chocolates).
It’s also the perfect recipe to use when doing Christmas baking with the kids.

- 125g butter (cubed)
- 100g sugar
- 1 egg
- 1 tsp vanilla extract
- 200g flour
- ½ tsp baking powder
- 150g choc chips (white or brown)
- 1 bag christmas red and green M&M's
- OPTIONAL
- *80g cranberries and 100g white choc chips
- *100g chopped nuts and 100 white choc chips
- Preheat the oven to 180 degrees.
- Add the butter and sugar to the TM bowl and cream together for 1 minute on speed 6.
- Scrape down the sides and repeat for a further 20 seconds until light and fluffy.
- Add the egg and vanilla and mix for 20 seconds on speed 6-7.
- Add the flour and baking powder and mix on speed 2-3 for 15 seconds.
- Scrape down the sides and add the choc chips.
- Mix for a final 10 seconds on speed 3 until everything is combined.
- Roll into tsp size balls and line up on a baking tray. Don't put them too close together as they will spread when baking.
- Flatten each one slightly with the heel of your hand or back of spoon and push in a few christmas coloured M&M's.
- Bake for 10 to 15 minutes or until golden brown around the edges. If you want them to be chewy, then take them out when they are still slightly undercooked.
- Enjoy.
Double the recipe and freeze them.
